做法:春笋(sǔn )切成片后加(jiā )少(shǎo )许盐捞出后用清水(shuǐ )浸泡,生(shēng )姜切片,葱切成段。锅(guō )烧热,倒(dǎo )入2勺油,放入生姜、春笋、牛(niú )肉片(piàn )、葱段翻炒1分钟左右。再加(jiā )入生抽、老抽、蚝油翻炒均匀,加入少量清水半掩住春笋,盖上(shàng )锅盖大火煮开后转中火。煮到水快熬干的时(shí )候加入盐(yán ),翻炒均匀稍收汁(zhī )时(shí )盖上锅盖焖。
