做法:春笋切成片后加少许(xǔ )盐捞(lāo )出后用清水浸泡,生姜切片,葱(cōng )切成段。锅烧热,倒入2勺油,放入生姜(jiāng )、春笋、牛肉片、葱段翻炒1分钟(zhōng )左(zuǒ )右。再加入生抽、老抽、蚝油翻炒均匀,加(jiā )入少(shǎo )量清(qīng )水(shuǐ )半掩住春笋,盖上(shàng )锅盖大火煮开后转中火。煮到水快熬干(gàn )的时候加入盐(yán ),翻炒(chǎo )均匀(yún )稍收汁(zhī )时盖上锅盖焖(mèn )。
