做法:春(chūn )笋(sǔn )切成片后加少许盐捞出后用(yòng )清水浸泡(pào ),生姜(jiāng )切片,葱切(qiē )成段(duàn )。锅烧(shāo )热,倒入2勺油,放入生姜、春笋、牛肉片、葱段翻炒1分钟左右。再加(jiā )入生抽、老抽、蚝(háo )油翻炒均匀(yún ),加(jiā )入少量清水半掩住春笋,盖上锅盖(gài )大火煮开后转中火。煮到水快熬干的时候(hòu )加入(rù )盐,翻(fān )炒均匀稍收汁时盖(gài )上锅盖焖。
